Basic Wholemeal Bread
Ingredients:
- 500g (18oz) wholemeal flour
- 1 tsp salt
- 1 tsp active dry yeast
- 300ml (10fl oz) warm water
Instructions:
1. In a large bowl, whisk together the flour, salt, and yeast.
2. Gradually add warm water while stirring until a dough forms.
3. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
4. Form into a ball, place in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
5. Punch down the dough and shape it into a loaf.
6. Place in a greased 9x5 inch (23x13 cm) loaf pan.
7. Cover and let rise for another 30 minutes, or until doubled in size.
8. Preheat oven to 220°C (425°F).
9. Bake for 30-35 minutes, or until golden brown and sounds hollow when tapped.
10. Let cool on a wire rack before slicing and serving.
Wholemeal Sandwich Bread
Ingredients:
- 500g (18oz) wholemeal flour
- 2 tsp sugar
- 1 tsp salt
- 2 tsp active dry yeast
- 350ml (12fl oz) warm water
Instructions:
1. In a large bowl, whisk together the flour, sugar, salt, and yeast.
2. Gradually add warm water while stirring until a dough forms.
3. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
4. Form into a ball, place in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
5. Punch down the dough and divide it into two equal pieces.
6. Roll out each piece into a rectangle, approximately 12x6 inches (30x15 cm).
7. Roll up each rectangle from the long side and pinch the seams together.
8. Place the loaves on a greased baking sheet.
9. Cover and let rise for another 30 minutes, or until doubled in size.
10. Preheat oven to 200°C (390°F).
11. Bake for 25-30 minutes, or until golden brown and sounds hollow when tapped.
12. Let cool on a wire rack before slicing and serving.
Wholemeal Herb Bread

- 1 tbsp fresh rosemary leaves
