Roasted Mixed Vegetables
Ingredients:
- 1 pound mixed vegetables (such as carrots, broccoli, zucchini, and bell peppers)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
1. Preheat oven to 425°F (220°C).
2. In a large bowl, combine the vegetables, olive oil, oregano, salt, and pepper. Toss to coat.
3. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
Sautéed Mixed Vegetables
Ingredients:
- 1 pound mixed vegetables (such as onions, celery, carrots, and green beans)
- 2 tablespoons vegetable oil
- 1/4 cup chopped onion
- 1 minced clove of garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
1. Heat the oil in a large skillet over medium heat.
2. Add the onion and sauté for 2-3 minutes, until softened.
3. Add the garlic and sauté for 1 minute more.
4. Add the remaining vegetables, salt, and pepper. Sauté for 5-7 minutes, or until tender-crisp.
Steamed Mixed Vegetables
Ingredients:
- 1 pound mixed vegetables (such as broccoli, carrots, cauliflower, and peas)
- 1 tablespoon water
- Salt and pepper to taste
Instructions:
1. Place the vegetables in a steamer basket or colander.
2. Add the water to the bottom of a large pot and bring to a boil.
3. Place the steamer basket over the boiling water, cover, and steam for 3-5 minutes, or until tender-crisp.
4. Season with salt and pepper to taste.
Stir-Fried Mixed Vegetables
Ingredients:
- 1 pound mixed vegetables (such as broccoli, carrots, snow peas, and mushrooms)
- 2 tablespoons vegetable oil
- 3-4 cloves of minced garlic
- 1 teaspoon grated fresh ginger
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1/2 teaspoon sesame oil
Instructions:
1. Heat the oil in a large skillet or wok over high heat.
2. Add the garlic and ginger and sauté for 30 seconds, until fragrant.
3. Add the vegetables and stir-fry for 3-4 minutes, or until tender-crisp.
4. Add the soy sauce, rice vinegar, and sesame oil. Stir-fry for 1 minute more.
Other Variations:
- Add diced tomatoes, corn, or spinach to any of these recipes.
- Season the vegetables with herbs and spices such as thyme, rosemary, or cumin.
- Serve the vegetables over rice, pasta, or as a side dish.
