Ingredients:
For the Dough:
- 2 cups all-purpose flour (+ more for dusting)
- 1 teaspoon salt
- 1/4 cup vegetable oil
- 1/4 cup warm water
For the Filling:
- 1 pound potatoes, boiled and mashed
- 1 large onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 carrot, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon salt
- 1/4 cup chopped fresh cilantro
For Frying:
- Vegetable oil for deep frying
Instructions:
To Make the Dough:
1. In a large bowl, combine the flour and salt.
2. Add the oil and rub it into the flour until it resembles coarse crumbs.
3. Add the warm water gradually, kneading the dough until it comes together and forms a smooth ball.
4. Cover the dough and let it rest for at least 30 minutes.
To Make the Filling:
1. In a large skillet, heat a little vegetable oil over medium heat.
2. Add the onion and green bell pepper and cook until softened.
3. Add the carrot, cumin, coriander, chili powder, turmeric, garam masala, and salt. Cook for a few more minutes, until the spices are fragrant.
4. Stir in the mashed potatoes and cilantro. Season with additional salt and spices to taste.
To Assemble the Samosas:
1. Divide the dough into small, golf ball-sized pieces.
2. On a lightly floured surface, roll out each piece into a thin, circular shape.
3. Place a spoonful of the filling in the center of each circle.
4. Fold the dough over the filling to form a triangle.
5. Crimp the edges to seal.
To Fry the Samosas:
1. Heat the vegetable oil in a deep fryer or large Dutch oven to 375°F (190°C).
2. Carefully drop the samosas into the hot oil and fry until golden brown on all sides.
3. Drain the samosas on paper towels before serving.
Tips:
- For a crispier samosa, fry in batches and make sure the oil is hot before adding the samosas.
- To bake the samosas instead, preheat the oven to 400°F (200°C). Brush the samosas with oil and bake for 20-25 minutes, or until golden brown.
- You can use any vegetables you like for the filling, such as peas, corn, or beans.
- Serve the samosas with your favorite dipping sauce, such as tamarind chutney or green chutney.
