Classic Beef Stew
Ingredients:
- 1kg beef chuck roast, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups beef broth
- 1 cup red wine (optional)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions:
1. Season the beef cubes with salt and pepper.
2. Heat the oil in a large Dutch oven or pot over medium-high heat.
3. Brown the beef cubes in batches until all sides are seared. Remove the beef from the pot and set aside.
4. Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
5. Add the garlic and cook for 1 minute more.
6. Sprinkle the flour over the vegetables and cook, stirring constantly, for 1 minute.
7. Gradually whisk in the beef broth and red wine (if using).
8. Return the beef to the pot along with the Worcestershire sauce, tomato paste, thyme, oregano, and bay leaf.
9. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the beef is tender.
10. Season with additional salt and pepper to taste.

- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions:
1. Brown the beef in a large Dutch oven or pot over medium-high heat.
2. Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
3. Stir in the garlic and cook for 1 minute more.
4. Add the red wine and simmer until reduced by half, about 5 minutes.
5. Pour in the beef broth, water, Worcestershire sauce, tomato paste, Dijon mustard, thyme, oregano, and bay leaf.
6. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the beef is tender.
7. Season with salt and pepper to taste.
